Baja shrimp tacos

One of the best things about hanging out in Baja is the abundance of delicious fresh fish and shrimp tacos. They are usually made with fresh corn tortillas, local ingredients like tomatoes, avocados, cabbage, cilantro, limes, and fresh-caught fish or shrimp.

Try these Tequilla Lime Baja Shrimp Tacos to add a little Baja sunshine to your meal.

Buy Wild-Caught Fresh or Frozen Shrimp from Mexico or the Gulf Coast

Be sure to look for wild-caught fresh or frozen shrimp from Mexico, the Gulf Coast US, or the Florida Keys rather than frozen farmed shrimp (cultivated) from Southeast Asia or Mazatlan, Mexico. Not only is farmed shrimp harder on the planet, but we have seen many shrimp farms visiting Thailand and Mexico and sadly, shrimp farms are typically found in very polluted water, often even in sewage effluent. No bueno!

Tequila Lime Baja Shrimp Tacos

1 lb wild-caught shrimp, peeled and deveined
2 oz lime juice, divided in half
2 oz tequila
2 tbsp organic olive oil
4 garlic cloves, crushed
1/4 tsp ground cumin
1/4 tsp Himalayan sea salt
1/4 tsp freshly ground black pepper
1/4 tsp crushed red pepper flakes
3 tablespoons chopped cilantro, garnish

Taco Condiments
12 fresh corn tortillas, warmed
2 cups shredded cabbage
1 large tomato diced
1 avocado, quartered
4 limes, quartered
favorite hot sauce or salsa

Directions for Tequila Lime Baja Shrimp Tacos
Mix together 1oz lime juice with the tequila, olive oil, garlic, and spices. Marinate the shrimp for 1+ hours. The lime and tequila will partially “cook” the shrimp.

Heat a large cast-iron skillet over high heat. Add shrimp and marinade to the pan, and cook for about 2-3 minutes, stirring and turning shrimp until well heated and thoroughly cooked.

Remove from heat and sprinkle with the remaining 1 oz of lime juice and the chopped cilantro. Toss well, and make DIY Baja Shrimp Tacos with warm corn tortillas, shredded cabbage, diced tomatoes, diced avocado, and a squeeze of lime. Buen provecho!
