It’s Throw-Back-Thursday and I just made one of my favorite recipes: Healthy Peanut Butter Chocolate Chip Oatmeal Cookies. As we’ve been sailing down the coast of California, we always seem to have bananas getting over-ripe on us. I’m starting to wonder if this is just my husband’s ploy to get me to make these cookies!?! Bananas are a main ingredient in these Peanut Butter Chocolate Chip Oatmeal Cookies.
If you’re a sailor you might be saying “you have bananas on board?” There is an old superstition about bananas on board, and we sailed on one boat where the skippers wife wouldn’t allow any! But that’s another story…We love our bananas and always try to have some on board.
As soon as I notice we have 2 over-ripe bananas, I know it’s time to make Healthy Peanut Butter Chocolate Chip Oatmeal Cookies! They are a variation of my Healthy-licious Oatmeal Cookies Recipe.
For this variation, I use peanut butter instead of almond butter, and peanuts instead of almonds. I also add in the cocoa powder to make them extra chocolatey!
I love to make a batch of these just before we head off-shore to have ready for night watch snacks. They are packed full of healthy ingredients and protein and are an easy grab-and-go snack to help keep us awake on the night watch.
