Kiwi-Berry Ice Pops

A few years our marina was giving away free Otter pops for the 4th of July holiday. That got me thinking about eating Otter pops at the pool as a kid…

Back then I thought they were delicious. But when I look at them today I see SO many nasty ingredients! They contain high-fructose corn syrup, artificial flavoring, and artificial coloring including red #40, yellow #5 and #6, and blue #1. What ARE all those chemicals doing in our “food” anyway? And what do they actually do to our bodies?

Are your popsicles toxic?

As you may know, artificial coloring and flavoring have been linked to ADD, ADHD, other neurological disorders, gut dysbiosis, and even cancer. No bueno, no thanks!

Did you also know that ALL high fructose corn syrup (HFCS) contains mercury? (This was a recent revelation to me!) HFCS is highly processed using mercury, which leaves some residue behind. (And high fructose corn syrup is now often listed as “corn sugar“ on labels, to confuse you!!)

Ironically a small amount of mercury “per serving” is allowable and “generally regarded as safe” (GRAS) to eat according to the FDA. However, the amount of mercury that is allowable is ONE serving of HFCS per day. Sadly, most people who eat HFCS, eat FAR more than one serving a day. And especially in children, this is very concerning. Mercury has an affinity for storing in the brain. Here it can exacerbate neurological and cognitive issues. Best to say NO to eating ANY high fructose corn syrup.

So how to not be deprived of an icy treat for the holiday? I make my own healthy Kiwi-Berry Ice Pops. And used these great Silicone Ice Pop Makers. (It’s also worth knowing that silicone molecules show up in food that is baked in silicone pans or on baking sheets. Yikes!! However, using silicone for cold food items in the fridge or freezer does not appear to impart silicone molecules into the food.)

Here’s the recipe for the Kiwi-Berry Ice Pops I made, no added sugar, and super delicious!

Packed with vitamin C and other antioxidants, fiber, and potassium, these kiwi-berry ice pops have nothing artificial in them and no added sweeteners, since the berries and kiwis add plenty of sweet goodness themselves.

Ingredients

  • 1 cup of coconut water
  • 2 cups of organic frozen mixed berries
  • 2 kiwis scooped out of their skin

Instructions

  • Place all ingredients in a Vitamix or blender and blend on high for one minute.
  • Pour into silicon ice pop makers or other popsicle makers.
  • Put in freezer for a few hours, until frozen.
