Though I thought they were delicious back then, when I look at them today I see SO many nasty things including high-fructose corn syrup, artificial flavoring, red #40, yellow #5 and #6, and blue #1. What ARE all those chemicals doing in our “food” anyway?
Not wanting to be deprived of an icy-treat on this high-80° day, I found these great Silicone Ice Pop Makers and decided to make my own healthy version.
Kiwi-Berry Ice Pops
Packed with vitamin C and other antioxidants, fiber, and potassium, these kiwi-berry ice pops have nothing artificial in them and no added sweeteners, since the berries and kiwis add plenty of sweet goodness themselves.
Ingredients
1 cup of coconut water
2 cups of organic frozen mixed berries
2 kiwis, scooped out of their skin
Directions
Place all ingredients in a Vitamix or blender and blend on high for one minute. Pour into silicon ice pop makers or other popsicle makers. Put in freezer for a few hours, until frozen.
