This healthy chocolate-banana protein smoothie is SO good you may just feel like you’re eating dessert for breakfast.
Eating a high-protein, healthy-fat breakfast sticks to my ribs and gets me through the morning with out being hungry. When we’re short on time, like on “morning-yoga days”, this is our go-to smoothie.
Healthy fats in the coconut milk + coconut oil combined with vegan protein powder (I like Garden of Life unflavored) do the heavy lifting, while the greens, flax meal, and almond meal provide essential vitamins and minerals. The banana, berries and cocoa powder round out the taste sensation, De-Lish! Oh, and the cinnamon helps keep the banana and berries from spiking your blood sugar.
We prefer drinking our smoothies at room temperature rather than ice-cold for several reasons. In the winter this helps keep your core warmer. It’s also easier on your digestion not to drink or eat ice-cold foods. Ice-cold fats (like ice cream) are especially hard on your digestion. The torque of the Vitamix tends to heat things up quickly so the frozen berries help cool it down to room temp.
Chocolate-Banana Protein Smoothie
2 cups Coconut milk*
1 cup fresh or frozen organic berries
1 TBSP coconut oil
2 scoops vegan protein powder
1 large handful spinach, arugula or other greens
2 TBSP flax meal
2 TBSP almond meal
4 TBSP unsweetened cocoa powder
1 TBSP cinnamon
Put ingredients into Vitamix or blender in the order listed. Fill with filtered water after all other ingredients are in. Blend until smooth. If using a regular blender, you may need to stop and scrape ingredients down to the bottom.
*You can make your coconut milk from scratch in your Vitamix. 2 cups filtered water + 2 cups large-shred unsweetened coconut. Blend on high for 3-4 minutes. Fill a quart jar and keep it in the fridge for up to a week.
