One of the best things about hanging out in Baja is the abundance of delicious fresh fish and shrimp tacos. They are usually made with fresh corn tortillas, local ingredients like tomatoes, avocados, cabbage, cilantro, limes, and fresh-caught fish or shrimp.
An added bonus this year is that the Mexican government has banned all GMO corn from being grown or produced in their country. So we can be fairly certain that our fresh tortillas are GMO-free.

Buy Fresh-Caught or Frozen Shrimp from Mexico or the Gulf Coast
Be sure to look for fresh-caught or frozen shrimp from Mexico, the Gulf Coast, or Florida Keys rather than frozen farmed shrimp from Southeast Asia. Not only is farmed shrimp harder on the planet, but we saw many shrimp farms visiting Thailand several years ago, and sadly, the very polluted Chao Phraya River flows right out of Bangkok and straight into the shrimp farms. Ummm…not very appetizing! 😉
