Hearty Wild Rice and Lentil Soup

Wild Rice & Lentil SoupHappy New Year! Do you set resolutions or intentions? I’m setting my intention for 2015 to be the best year yet.

Studies show that people who set intentions rather than resolutions are more likely to see their intentions come to fruition. Intentions focus on the future and tend to feel a bit more positive than resolutions which focus on the past.

I’m also starting out my new year by recalling all the wonderful things I have to be grateful for: my good health, lots of loving friends and family, a beautiful sailboat-home, and my two new kittens, just for starters. What are you grateful for?

I’m also grateful that my husband Kirk loves to cook and makes such fabulous meals too. We truly eat like kings every night. Last night he whipped up this delicious Hearty Wild Rice and Lentil Soup.

So often we cook by the seat-of-the-pants—not following a recipe—just throwing things together. This soup was SO good I asked him to write down everything he put into it, so I could share it with you, and here it is.

Hearty Wild Rice and Lentil Soup

Ingredients
32 oz unsalted vegetable broth
2 cups water
1 ½ cups lentils
1 cup wild rice
3 carrots, thickly sliced
4 stalks celery, chopped
½ fennel bulb, chopped
4 kale leaves with stems, chopped
2 collard green leaves with stems, chopped
1-2 cloves garlic, minced or pressed
1” piece of fresh ginger (grated)
1 TBSP coconut oil
1 TBSP turmeric powder
1 TBSP ground coriander
1 TBSP ground cumin
1 TBSP ground cardamom
2 TBSP dried oregano
1 tsp smoked sea salt
Chopped parsley and roasted sunflower seeds for garnish

Directions
Melt the coconut oil in a soup pot, and sauté the garlic and grated ginger for a few minutes. Add the broth and water, then rice, lentils, vegetables and spices.

Bring to a boil, then simmer for 20-30 minutes, or until vegetables are cooked to your desired texture. Experiment with using different vegetables, what ever you have on hand. Add an onion or some beets and beet greens, etc.

Garnish with parsley and roasted sunflower seeds.

Serves 6-8
